Operations

 

The combisteamer ovens can be run in 2 modes "manual" or "Programmed", these are divided into 3 steps TIME/TEMP/HUMIDITY. In the following article these will be explained.

Functions:
Recipe book - The appliance come present with many recipes ready to execute. (see list below)

Wash mode - Selecting accessories the oven gives you access to a washing mode, when activated the oven automatically washes itself.

 

Step 1: (operating in manual mode)

  • Use the "SELECT" key to navigate the parameter and then the "STEP" key to scroll trough parameter.
  • To select a desired parameter press the "SELECT" button, then edit the values using the "+" & "-".

Parameters:
Phases - This appliance can preset 9 cooking phases with different settings and parameters, the display will turn RED if the selected step s not active. To activate an inactive step simply edit the parameter to the desired time and temperatures.

Temperature - Temperatures can be set from 30°C to 260°C, once the cooking is in process the cabin temperature can be observed with the "EYE" icon.

Core temperature - Using the supplied probe the oven allows you to measure the current and desired core temperature of a product.

Delta Value - The delta value can be set with a temperature between 0°C to 100°C. This will determine the desired difference between the core temperature and cabin temperature.

Humidity - This setting allows the user to set a continuous humidity level based on % values that range in multiples of 10.

Preheating - When using the preheating button keep in mind that the oven will heat to the set temperature + 40°C. Once the oven has preheated a buzzer will go off precising that the oven is preheated and the door is ready to be opened.

Airflow - The airflow key will enable the user to choose between 3 settings (minimum speed, medium speed, maximum speed). However this appliance is equipped with a "SEMI-STATIC" backing mode, to activate it simply press the "STEP" key when already in the airflow parameter. The words "ST OFF" should change to "ST ON".

Semi-Static - This enables the oven to distribute the heat evenly and keeping fans to minimum use. When active the fans will only operate when the heating elements are on just to distribute the heat evenly.

 

Step 2:

  • Once the parameters have been edited to your desire the oven is set.
  • You can now insert the desired product in the cooking chamber. (insert temperature probe if necessary).
  • Finally press the "START/STOP" button to start the cooking process.
  • To stop the cooking cycle hold the "START/STOP" button for a few seconds.
  • The cooking parameter can also be modified during operation, simply use the "STEP" key to navigate and select the parameter you desire changing.
  • When finished using the appliance its recommended to clean at least once at the end of each day. Please follow the "cleaning" guide.


  

Step 3: (How to set up personal programs)

NOTE: The user is able to store up to 200 programs/recipes and each may have a name containing up to 10 letters of the alphabet.

  • Once you have successfully set up a cooking cycle that you intended to store do the following.
  • Press the "P" key the access the "programming menu" and navigate the menu to select the "SAVE" symbol. Use the "+" &"-" buttons to navigate "LEFT & "RIGHT" and the "STEP" button for vertical movements. 
  • When selecting the letters the "STEP" button can be held to select a capital letter.

 

Step 4: (How to use preset recipes)

  • The appliance comes with 40 preset recipes and are accessible by selecting the "CHEF HAT" icon. (See tables below)

  • Once the key is pressed you will have access to a library of 6 icons as displayed in the tables below.
  • Choose the recipe number desired with the "SELECT" button and the appliance will load the preset cooking cycle.
  • Press "START/STOP" to start the cooking process.

 

Step 5: (How to use the HACCP option USB DRIVE needed)

  • The appliance is equipped with a pre-built HACCP option which records the operative data of cooking cycles performed, constantly monitoring their progress.
  • To activate this feature start by pressing the "P" key to access the programming menu.
  • Use the "STEP" key to navigate to the bottom of the menu and when HACCP is highlighted press the "SELECT" key to enable it.
  • You can now start your new cooking cycle with the HACCP feature activated. The feature is automatically disabled once the cooking cycle has finished.
  • To view the data that was recorded turn off the oven by holding the "START/STOP" button for a few seconds.
  • Remove the USB from the oven and plug it to a working PC. 
  • Open the desired file on the PC.
