Here you will find information about operating a blast chiller.

Operations

Cycle Phases (temperatures mentioned are all tested using the probe):

First Phase(Hard chill): This phase activates the compressor and fan to bring products from 80°C / 170°F to 20°C / 70°F.

Second Phase(Soft chill): This phase is used to prevent a thin layer of ice from forming on the product by only using the compressor, this phase ends when the appliance reads a temperature of (Usually 4°C, 5°C).

Third Phase(Freezing cycle): In this phase the appliance will run fan and compressor simultaneously, bringing the temperature down to (usually -18°C or 0°F).

Forth Phase(HOLD mode): At the end of every preset cycle program the appliance will enter the hold state (HdS function). This phase holds the temperature set in the HdS function, its not recommended to keep the appliance in this phase for a very long time.

Cycle Functions:

Cycle 1: for fast chilling and conservation of foods (hard +soft chill).

Brings core temperature (using probe) to 4°C ~ 5°C. (4 hours)(holding temperature (Hds)3°C)

Cycle 2: for chilling and fast freezing of foods (hard +soft + freezing cycle).

Brings core temperature (using probe) to -18°C. (6 hours)(holding temperature (Hds)-18°C)

Cycle 3: for direct fast freezing (only fast freezing cycle).

Brings core temperature (using probe) to -18°C. (4 hours)(holding temperature (Hds)-18°C)(This program is recommended for cold/room temperature products)

Cycle 4: for fast freezing avoiding ice skin (hard chill + freezing cycle)

Brings the core temperature (using probe) to -18°C but by skipping the soft chill cycle a thin layer of ice will cover the product. (4 hours)(holding temperature (Hds) "OFF")

(This program is recommended for hotter products)

Step 1 :

  • Plug power supply directly into the main socket.
  • Check whether the rails are well placed inside the blast chiller chamber.
  • Place the container with the product inside the blast chiller and close the door.

ATTENTION!

Do not place products in the blast chiller with a higher temperature than 70ºC.

Do not place warm containers directly on the bottom of the appliance, place them in the rails.

Do not place flammable or explosive products in the blast chiller.

Do not place products completely against the back of the appliance, leave a space of 5 cm.

Do not place warm products in a turned-off blast chiller

Do not cover the containers (also not with foil). The best result and time will be reached when the biggest possible surface is exposed.

Step 2:

  • Press the cycle selection button(3), here you can choose your desired cooling cycle from the preset cycles mentioned above. To scroll through the cycle simply keep pressing the cycle selection button(3)
  • Once you have selected the desired cycle, press the "Start/Stop" button(2), this will light the corresponding yellow LED on the button.

NOTE: A cycle can be paused by pressing the "Start/Stop" button(2). The display will show PAU until the "Start/Stop" button(2) is pressed again to restart the cycle.

Step 3 (Defrosting(1)):

  • Ensure there is not cycle or hold mode running.
  • Press and hold the "UP" arrow(1) for a few seconds until the defrost led lights up.

Step 4:

  • When the appliance is not in use, turn "OFF" the appliance by pressing the green switch to the off position.

NOTE: If the appliance is not being used for a longer period then its recommended to remove the plug from the socket and follow the "Cleaning" guide.
